1 (18.5-ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup or more of confectioners sugar
Preheat oven to 350 degrees. Pour cake mix into a large bowl. Stir in eggs, oil and lemon extract until well blended. The batter will be thick and will take awhile to stir, but it will all be absorbed.
Form dough into 1 1/2 inch balls or drop heaping spoonfuls of dough into a bowl of confectioners sugar. Roll them around until the cookie is lightly coated.
Then place on an ungreased cookie sheet. Bake 10-15 minutes. Remove and cool before serving.
These are the best lemon cookies I have ever put in my mouth!
